Steps
Set oven to 375°F and allow it to fully preheat.
Lightly grease a 9×13-inch baking dish with cooking spray or softened butter, ensuring all surfaces are evenly coated.
In a skillet over medium heat, cook breakfast sausage, breaking it into small crumbles until evenly browned. Drain any excess fat.
In a large mixing bowl, whisk together pancake mix, whole milk, egg, vanilla extract, melted butter, pure maple syrup, and ground cinnamon until just incorporated. Batter should remain slightly lumpy. Do not overmix.
Spread half the pancake batter evenly in prepared baking dish. Top with cooked sausage and sprinkle shredded cheddar cheese evenly over, if using. Pour remaining pancake batter to cover sausage and cheese fully.
Place in center of preheated oven and bake for 25 to 30 minutes, or until top is golden brown and a toothpick inserted in the center comes out clean.
Allow the breakfast bake to rest for 5 minutes before slicing. Serve warm with additional maple syrup as desired.
