Add minced garlic to the skillet with shrimp. Continue cooking for 5 to 7 minutes until shrimp become opaque.
Drizzle in remaining olive oil. Toss cooked pasta into skillet. Season with Italian seasoning, black pepper, red pepper flakes, and salt. Pour in 1/4 cup reserved pasta water, adding more as needed.
Toss over medium heat until pasta is fully coated and heated through. Garnish with fresh chopped herbs if desired. Serve immediately.
